Thanks Pinterest: Paleo Cinnamon Rolls

  I’m trying to get all my baking done this final week before I go back to school & move in to Pi Phi (we have our meals prepared for us and therefore do not have access to the kitchen ourselves). I wanted to try something new & something that would make it feel a little more like fall…it’s still 100 degrees in the desert. I wasn’t even sure if paleo cinnamon rolls were a thing, so I turned to my good friend Pinterest and, lo & behold, they are a thing and they’re really good.

  The Ingredients (copy & pasted from where you can find the original recipe & directions – here):

– 1 3/4 cups finely ground blanched almond flour
– 1/4 cup coconut flour
– 1/2 tsp. sea salt
– 1/4 cup coconut oil or ghee, softened
– 2 Tbsp. raw honey, softened
– 2 large eggs, room temperature
– 1 Tbsp. vanilla extract

– 1/4 cup raw honey
– 2 Tbsp. coconut oil or ghee
– 2 Tbsp. ground cinnamon

– 1/4 cup raw honey, softened
– 1/4 cup coconut oil or ghee, softened
– 2 tsp. vanilla extract

-1/2 cup chopped pecans (optional)
