This coconut flour chocolate chip cookie recipe has been a huge hit in my house. I just made them last night in honor of Morgan’s last day of college (!!!!) but decided to try adding some extra ingredients and a few superfoods. The best thing about baking with superfoods is that they don’t change the flavor of whatever I’m baking at all, so I don’t even use measuring cups – just eyeball it! I used the original recipe and added:
– about 1 tblspn of almond butter
– some dried oats
– some chia seeds
– some flax
– a little bit of cooked quinoa!
They taste just as good as the original recipe, if not better, only they hold way more nutrients and are perfect to eat any time of day, even breakfast ;)
